Panera Bread

Panera Bread is a casual soup, salad and sandwich restaurant, with a bread and dessert bakery. You CAN eat at Panera Bread. They do not serve gluten free bread or bakery items. They do, however, have many gluten free choices, and the fact that they make nothing that contains wheat in the restaurant gives peace of mind that at least there won’t be gluten filled flours floating through the air. The bread doughs arrive at the restaurant premixed and they are kneaded with rice flour in the restaurant (as reported on their web site.)

Below is their official list of gluten free items, but I’ve found the people that work there don not seem to know anything about their gluten free choices. It’s best to print out this list and take it with you. Enjoy free wi-fi and a relaxing atmosphere while you’re there.

** Gorgonzola and bleu cheeses are commonly made with mold incubated on wheat. Some may choose to avoid these cheeses for this reason and you may substitute another cheese if you prefer. Items containing these ingredients are indicated below with (G) or (BC).

    My ex-husband was a baker at Panera for several years. There was extensive handle of wheat items in the back of the resturant, Utensils were exposed to wheat contamination on a regular basis. Bakers often didn’t wear gloves and there was no rice flour in the building. I grew up in a bakery and my ex was unfamiliar with even the basics of various flours. And this is from the highest rated “clean” resturant in the state by the company’s own standard. Housing 3 of the 5 top bakers, including my ex. I won’t step foot near a Panera for fear of a reaction.
