Stuffed Pepper Soup Recipe Image

Stuffed Pepper Soup (gluten free, egg free, can be dairy free)

Details
Servings: 6 cups
Ingredients
  • 3 Green Peppers
  • 1 onion chopped
  • 1 1/2 pounds ground sirloin cooked
  • 1 6 oz can tomato paste
  • 1 14 1/2 oz can tomato sauce
  • 1 14 1/2 oz can diced tomatoes
  • 1 32 oz box chicken broth
  • 2 boil in bag rice (white)
  • Parmesan cheese
  • salt and pepper to taste
Directions
  1. Saute green peppers and onion together saute till soft add tomato paste, sauce and diced tomatoes.
  2. Then add chicken broth, cooked rice and cooked sirloin simmer till thickened about 45 minutes add salt and pepper to taste.
  3. Add about 1/2 cup of parmesan cheese at the end. More cheese can be added to each serving if you like.
