Stuffed Pepper Soup (gluten free, egg free, can be dairy free)

Servings: 6 cups
Ingredients
- 3 Green Peppers
- 1 onion chopped
- 1 1/2 pounds ground sirloin cooked
- 1 6 oz can tomato paste
- 1 14 1/2 oz can tomato sauce
- 1 14 1/2 oz can diced tomatoes
- 1 32 oz box chicken broth
- 2 boil in bag rice (white)
- Parmesan cheese
- salt and pepper to taste
Directions
- Saute green peppers and onion together saute till soft add tomato paste, sauce and diced tomatoes.
- Then add chicken broth, cooked rice and cooked sirloin simmer till thickened about 45 minutes add salt and pepper to taste.
- Add about 1/2 cup of parmesan cheese at the end. More cheese can be added to each serving if you like.
