Servings: 4 servings
Ingredients
- 1-4 potatoes
- 1 can corned beef (up to 4 papas per) Could also use hanburger, steak or chicken instead
- 1 large or 2 small cans of tomato sauce.
- 1/2 pound of cheddar cheese.
- onion, garlic, chile powder, salt, pepper.
- Optional: minced green pepper, celery, carrots; canned string beans, frijoles de la olla or refritos.
- Cilantro leaves
- 2 cups water
Directions
- Chop meat into 1/2" inch cubes if using steak or chicken. If using hamburger meat or canned corned beef, chop into small pieces. Brown and set aside.
- Chop papas (potatoes) into no larger than 1" cubes.
- Spray a big frying pan with non-stick spray. Slightly cover the bottom of the pan with olive oil.
- Under medium heat, wilt the onion & garlic. Add potatoes, salt, pepper. Dust with chile powder. I like Gebhard's blend. Cook until papas are browning, slightly less than fork tender.
- Add the rest of the ingredients.
- Cover and Simmer
You could use goat cheese instead of regular cheese. We replace regular cheese with goat cheese all the time and it tastes great.
