Italian Wedding Soup My GF version

I have had fun creating this version. You can cook this Stove top for an hour or in the crockpot high 4 or low 6-8. I have the cook time listed for 1 hr here.

Servings: 6 servings

    Meatballs:

    • 1 pound extra-lean ground beef ( or ½ beef and ½ pork)
    • 2 eggs, beaten
    • 1/4 cup dried GF bread crumbs
    • 1 T Milk
    • 2 tablespoons grated Parmesan cheese
    • 1 teaspoon dried basil or T fresh chopped
    • 3 tablespoons minced onion

    SOUP:

    • 2 1/2 quarts chicken broth
    • *2 cups spinach - packed, rinsed and thinly sliced OR, 1 (10 ounce) package frozen chopped spinach, thawed and drained
    • 3/4 cup diced carrots
    • 2 stalks celery, chopped
    • 2 garlic cloves, minced
    • 1 onion, chopped
    • *3 medium Potatoes, chopped (can microwave for about 10 minutes add last hour) (I prefer these)
    • OR 3 ounces dry pasta (gluten free)
    • 1/2 pound chicken, cut into chuncks
    • Salt and Pepper to taste
    Directions
    For on the stove top-
    1. In a medium bowl, combine the beef, egg, bread crumbs, cheese, basil and onion. Shape mixture into marble/ bite size balls and set aside.*
    2. Pre heat Oven to 400 degrees.
    3. Place meatballs on baking pan and bake for 10-15 mins. OR (cook in pan until no longer pink) In a large stockpot heat chicken broth to boiling; stir in the spinach, carrots, potatoes, meatballs, salt and pepper.
    4. Put chunks of chicken breast into the soup and reduce heat to low cooking for an hour.(if not using potatoes, add the pasta 30 minutes before serving) and season with salt and pepper to taste.
    5. Serve hot with Parmesan cheese sprinkled on top
    For in the Crockpot-
    1. In a medium bowl, combine the beef, egg, bread crumbs, cheese, basil and onion. Shape mixture into marble/ bite size balls and set aside.
    2. Preheat Oven to 400 degrees. Place meatballs on baking pan and bake for 10-15 mins.
    3. In a large crockpot place stir in the spinach, carrot, onion, garlic, salt n pepper, and chicken broth ; add chicken breast whole and meatballs.
    4. On the last hour cut up the chicken into chunks and add potatoes( I microwave them for about 10 mins) or cooked pasta last 15 mins.
    5. Serve hot with Parmesan cheese sprinkled on top
