Ham and Potato Soup (gluten-free)

Servings: 6 servings
Ingredients
  • 1/2 large onion (chopped)
  • 1/4 margarine or butter (soy butter works as well)
  • 2 tablespoons Bob's Red Mill all purpose flour (gluten-free)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp garlic powder
  • 1 tsp dill
  • 2 cups water
  • 4 to 5 medium red potaes
  • 1 lb cubed ham (or turkey ham)
  • 2 cups milk (dairy or soy)
Directions
  1. In the bottom of your large soup pot combine margarine and onion and saute till onion is translucent.
  2. Remove from heat and stir in flour, salt, pepper.
  3. Add water and potatoes and return to medium heat. Stir in milk and bring to a boil letting simmer about 5 minutes or until sauce starts to thicken.
  4. Add cubed ham and garlic and dill and reduce heat to low, cover and let simmer 25 to 30 minutes. Stirring occasionally.
  5. Serve when potatoes are no longer firm.
