Cream of Chicken Soup

Ingredients- 1/2 chicken breast (optional) (i don't use it)
- 1 1/2 teaspoons chicken boullion
- 1 cup milk
- 2 tablespoons butter/margarine
- 2 tablespoons feathlight flour mix (see ingredients below)
- 1/8 teaspoon salt
- dash pepper
Featherlight Mix - from Bette Hagman\'s Gluten Free Gourmet Bakes Bread (use 2 T of this mix)- 1 cup Rice Flour
- 1 cup Cornstarch
- 1 cup Tapioca Flour
- 1 tablespoon Potato Flour (not starch)
- 1 cup Rice Flour
- 1 cup Cornstarch
- 1 cup Tapioca Flour
- 1 tablespoon Potato Flour (not starch)
Directions
- Cook chicken breast and then cut into small pieces. Set aside.
- Dissolve the chicken base in the milk.
- Melt butter over medium heat. Stir in Featherlight mix, salt & pepper. Continue Stirring over heat until slightly browned. Add milk. Stir with a whisk (to eliminate lumps) until sauce is thickened and boiling. Add chicken. Remove from heat.
- Can be used to replace 1 can of condensed soup in recipes.
