Cream of Chicken Soup

    Ingredients

    • 1/2 chicken breast (optional) (i don't use it)
    • 1 1/2 teaspoons chicken boullion
    • 1 cup milk
    • 2 tablespoons butter/margarine
    • 2 tablespoons feathlight flour mix (see ingredients below)
    • 1/8 teaspoon salt
    • dash pepper

    Featherlight Mix - from Bette Hagman\'s Gluten Free Gourmet Bakes Bread (use 2 T of this mix)

    • 1 cup Rice Flour
    • 1 cup Cornstarch
    • 1 cup Tapioca Flour
    • 1 tablespoon Potato Flour (not starch)
    Directions
    1. Cook chicken breast and then cut into small pieces. Set aside.
    2. Dissolve the chicken base in the milk.
    3. Melt butter over medium heat. Stir in Featherlight mix, salt & pepper. Continue Stirring over heat until slightly browned. Add milk. Stir with a whisk (to eliminate lumps) until sauce is thickened and boiling. Add chicken. Remove from heat.
    4. Can be used to replace 1 can of condensed soup in recipes.
