Zucchini Maison Recipe Image

Zucchini Maison (gluten free, egg free, can be dairy free, can be vegan)

Servings: 8 servings
Ingredients
  • 6 mediums Zucchini sliced
  • 1/4 cup Onion thinly sliced
  • 4 tablespoons Olive Oil
  • 2 tablespoons Chopped Parsley
  • 2 Tomatoes thinly sliced
  • dash Salt and Pepper
  • 1/2 cup Parmesan Cheese (leave out cheese if you can't eat it)
Directions
  1. Cook squash in boiling salted water until tender. Drain
  2. Saute onion in olive oil. Add parsley and remove from heat
  3. In a 1 1/2 quart buttered baking dish, layer zucchini, tomatoes and onions. Sprinkle with salt and pepper. Repeat layers.
  4. Bake 20 minutes at 375. Serves 6-8
