Zucchini Maison (gluten free, egg free, can be dairy free, can be vegan)

Servings: 8 servings
Ingredients
- 6 mediums Zucchini sliced
- 1/4 cup Onion thinly sliced
- 4 tablespoons Olive Oil
- 2 tablespoons Chopped Parsley
- 2 Tomatoes thinly sliced
- dash Salt and Pepper
- 1/2 cup Parmesan Cheese (leave out cheese if you can't eat it)
Directions
- Cook squash in boiling salted water until tender. Drain
- Saute onion in olive oil. Add parsley and remove from heat
- In a 1 1/2 quart buttered baking dish, layer zucchini, tomatoes and onions. Sprinkle with salt and pepper. Repeat layers.
- Bake 20 minutes at 375. Serves 6-8
