Summer Squash Casserole (gluten free)

This is so light and tasty, even those who don't like squash may love it! Don't let the name fool you- it's great any time of year.

Servings: 8 servings
Ingredients
- 3 pounds Yellow Squash
- 1/2 cup Butter
- 3 Eggs Beaten
- 2 tablespoons Cornstarch
- 1- 5 oz can Evaporated Milk
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 1/2 cup Chopped Onion
- 3 tablespoons Sugar
Directions
- Preheat oven to 425
- Wash and slice squash. Place in a large pot. Add small amount of water. Boil squash until just tender. Drain well.
- Slightly mash squash and mix with remaining ingredients.
- Pour into well buttered 3 quart glass baking dish
- Bake 30 minutes or until set.
