Summer Squash Casserole (gluten free)

This is so light and tasty, even those who don't like squash may love it! Don't let the name fool you- it's great any time of year.

Servings: 8 servings
Ingredients
  • 3 pounds Yellow Squash
  • 1/2 cup Butter
  • 3 Eggs Beaten
  • 2 tablespoons Cornstarch
  • 1- 5 oz can Evaporated Milk
  • 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1/2 cup Chopped Onion
  • 3 tablespoons Sugar
Directions
  1. Preheat oven to 425
  2. Wash and slice squash. Place in a large pot. Add small amount of water. Boil squash until just tender. Drain well.
  3. Slightly mash squash and mix with remaining ingredients.
  4. Pour into well buttered 3 quart glass baking dish
  5. Bake 30 minutes or until set.
