Roasted Potatoes Recipe Image

Roasted Potatoes (gluten free, dairy free, egg free, vegan)

This is a great go together with Grilled Steak or Chicken. I like to microwave these the night before or early in the day and cool in the fridge while preparing my marinade and protein of choice.

Ingredients
  • 6-7 Potatoes with skins scrubbed
  • Olive Oil
  • 1 Tbl Italian spices Or Thyme
  • 1/2 tsp Garlic powder or to taste
  • Salt to taste
Directions
  1. Wash/scrub potatoes,prick each with fork.
  2. Microwave on microwave safe plate cover with waxpaper if desired, for baked potatoes about 20-25 mins. Allow to cool.
  3. Cut into cubes or slice. Place in a bowl.
  4. Add seasonings and olive oil. Gently fold to coat.
  5. For OVEN- In a bar pan or the like Bake @ 450 degrees for about 20-30 mins until light brown.
  6. Grill- In tinfoil over Med-high heat for about 25 mins. Turning once.
