Rice and Bean Casserole

Found this recipe online- Bushes beans-This rice and beans casserole is a great way to use up any leftover rice you might have on hand. Vegetarian rice and beans casserole can also be prepared super quick if you have all the ingredients on hand. Just open up a can of baked beans, add a few spices and bake! Servings: 6 servings
Ingredients
  • 1-28 ounce can vegetarian baked beans
  • 1 1/2 cups cooked rice
  • 1/2 cup chopped red onion
  • 1/2 cup shredded carrot
  • 1/2 cup thinly sliced celery
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground ginger
Directions
  1. Combine all ingredients including vegetarian baked beans in a lightly greased 2-quart casserole.
  2. Bake at 350 for 35 to 40 minutes or until bubbly.
