Mac and Cheese (from The Grill on the Alley) (gluten free, egg free, vegetarian)

My mom's adapted version of the chef's recipe of the famous, decadent Mac and Cheese at The Grill on the Alley Restaurants. http://www.thegrill.com
Details
Servings: 8 servings
Ingredients
  • 1 quart milk
  • 8 ounces Velveeta cheese
  • 8 ounces Danish Fontina cheese
  • 8 ounces Guyere cheese
  • 2 bags Small shells (or elbows) rice pasta (I use Tinkyadad)
  • dash salt and pepper to taste
  • dash Cayenne powder
  • Parmesan cheese shavings and GF breadcrumbs
Directions
  1. Cook small rice pasta shells al dente
  2. In saucepan, add milk, salt, pepper, cayenne Bring milk to just a boil. Add cheeses, which have been cut into small cubes Simmer and stir until cheeses melt.
  3. Place shells in baking dish, toss with cheese mixture
  4. Coat with light sprinkling of breadcrumbs
  5. Broil in center of oven until golden brown.
  6. Garnish with parmesan shavings

    This recipe sounds great! I just made a homemade versiom of mac n cheese, but my hubby was the only one that didn't like it much. He wanted me to put some velveeta in it to make it 'creamier'. So, this recipe would be great to try out! Thanks! And to the others that posted, yes, Velveeta is gluten free. I have two different grocery guides (one from Triumph Dining and one from Cecelia's Marketplace) and both list it as gluten free. Though it doesn't list modified food starch on the label, that is an ingredient that can or cannot have gluten. It depends on the manufacturer. If it contains wheat, they still have to declare it as it is one of the 8 allergens. This does not rule out barley, rye,etc though. Most manufacturers here in amercia use cornstarch.

    I don't think Velveeta cheese is gluten free. I thought I remembered it having modified food starch or wheat in it?

    Celiac.com has a really great list of unsafe items. Modified Food starch is one of those that may or may not depending on how it is made. Here is the link - almost to the end is list of items that are questionable. It comes in handy.

    There are lots of places online that list Velveeta as gluten free. Here's just one - "According to the Jackson Siegelbaum Gastroenterology office in Harrisburg, Pennsylvania, Velveeta cheese is considered a gluten-free product and approved for gluten-free diets. American cheese, another processed cheese, also falls under the same category."

    Celcelia's Glute Free Shopping Guide 2009/2010 edition also lists it as gluten free. If it's nutritious is another discussion :-)

    There is not modified food starch.
    Here is the ingredient list on the package: MILK, WATER, MILKFAT, WHEY, WHEY PROTEIN CONCENTRATE, SODIUM PHOSPHATE, MILK PROTEIN CONCENTRATE, ALGINATE, SODIUM CITRATE, APOCAROTENAL (COLOR), ANNATTO (COLOR), ENZYMES, CHEESE CULTURE.
