Light Fried Rice (gluten free, dairy free, egg free, vegan)

Came up with this when I had left over rice:)

Servings: 4 servings
Ingredients
  • 3 cups Cooked rice(hot- reheated in micro)
  • pam spray
  • 1 green onion chopped
  • 1 poblano pepper chopped
  • 1/2 tsp garlic
  • 1 stalk celery minced
  • 1 carrot (4 baby) minced
  • salt and pepper to taste
Directions
In a non stick pan spray pam or similar spray and saute veggies about 10 mins add rice and cook aditional 5 minutes.
