Baked Apples

Sometimes I make this with one or two apples and fill them with whatever dried fruit and nuts I have on hand. I switch up the type of Apple I use as well. Works well for a side dish or even a dessert.

Ingredients
  • Gala or Red Delicious apples (or your favorite)
  • 1/4 cup dried cherries (cranberries and raisins work well, too - or a combination)
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans (Optional)
  • 1/4 teaspoon cinnamon
  • 1/2 cup apple cider (or juice works fine)
  • 3 tablespoons butter, cut into pats
  • 1/2 cup maple syrup
Directions
  1. In a bowl, mix together dried fruit, sugar, pecans, cinnamon. Sett aside.
  2. With a melon scooper, core apples to hollow out the middle. Do not go all the way through. Fill each apple core with dry fruit mixture.
  3. Pour apple cider into casserole dish and place apples right side up. Place a pat of butter on apple hole filled with mixture.
  4. Drizzle maple syrup on top of all the apples.
  5. Bake at 350° for about 45 minutes or until apples are soft.
