Baked Apples

Sometimes I make this with one or two apples and fill them with whatever dried fruit and nuts I have on hand. I switch up the type of Apple I use as well. Works well for a side dish or even a dessert.

Ingredients
- Gala or Red Delicious apples (or your favorite)
- 1/4 cup dried cherries (cranberries and raisins work well, too - or a combination)
- 1/4 cup brown sugar
- 1/4 cup chopped pecans (Optional)
- 1/4 teaspoon cinnamon
- 1/2 cup apple cider (or juice works fine)
- 3 tablespoons butter, cut into pats
- 1/2 cup maple syrup
Directions
- In a bowl, mix together dried fruit, sugar, pecans, cinnamon. Sett aside.
- With a melon scooper, core apples to hollow out the middle. Do not go all the way through. Fill each apple core with dry fruit mixture.
- Pour apple cider into casserole dish and place apples right side up. Place a pat of butter on apple hole filled with mixture.
- Drizzle maple syrup on top of all the apples.
- Bake at 350° for about 45 minutes or until apples are soft.
