Apple Pecan Stuffing (gluten free, egg free, can be vegetarian)

Ingredients
- 5-6 cups any GF Bread Cubes, toasted (I usually use Whole Food Gluten Free Bakehouse Stuffing Cubes, or use 2 boxes of Vans waffles or any GF bread, toasted and cubed)
- 1 1/2 cups GF Stock – beef, chicken or veggie
- 1/2 onion chopped
- 1 rib celery chopped
- 1/2 cup butter
- 1 small granny smith apple, diced
- 1/2 cup pecans (optional)
- 1 1/2 teaspoons Italian Seasoning (or fresh oregano and basil chopped)
- Salt and Pepper to taste
Directions
- Toast the bread or waffles until crispy (or The Whole Foods Stuffing cubes are already toasted)
- Cook onions, celery and herbs in butter in a large heavy skillet over medium-low heat, stirring occasionally, until vegetables are softened, about 10 minutes.
- In a large bowl, toss together bread cubes, vegetables and stock. Season to taste with salt and pepper.
- Allow the bread to soak up the liquid for a couple of minutes - if too much liquid is there, add a little more bread, if it's too dry, add a little more liquid.
- Transfer the stuffing to a large baking dish. Bake, uncovered for 20 minutes or until heated through.
