Apple Pecan Stuffing (gluten free, egg free, can be vegetarian)

Servings: 8 servings
Ingredients
  • 5-6 cups any GF Bread Cubes, toasted (I usually use Whole Food Gluten Free Bakehouse Stuffing Cubes, or use 2 boxes of Vans waffles or any GF bread, toasted and cubed)
  • 1 1/2 cups GF Stock – beef, chicken or veggie
  • 1/2 onion chopped
  • 1 rib celery chopped
  • 1/2 cup butter
  • 1 small granny smith apple, diced
  • 1/2 cup pecans (optional)
  • 1 1/2 teaspoons Italian Seasoning (or fresh oregano and basil chopped)
  • Salt and Pepper to taste
Directions
  1. Toast the bread or waffles until crispy (or The Whole Foods Stuffing cubes are already toasted)
  2. Cook onions, celery and herbs in butter in a large heavy skillet over medium-low heat, stirring occasionally, until vegetables are softened, about 10 minutes.
  3. In a large bowl, toss together bread cubes, vegetables and stock. Season to taste with salt and pepper.
  4. Allow the bread to soak up the liquid for a couple of minutes - if too much liquid is there, add a little more bread, if it's too dry, add a little more liquid.
  5. Transfer the stuffing to a large baking dish. Bake, uncovered for 20 minutes or until heated through.
