Zucchini Pancakes (gluten free, dairy free, vegetarian)

I created this recipe for my daughter, who was dealing with a yeast problem. Cheese could certainly be added, if desired.

Servings: 9 cups
Ingredients
- 3 cups grated raw zucchini, squeezed dry(approx.med.)
- 3 eggs, beaten
- 3 tablespoons finely chopped onion
- 3 tablespoons olive oil
- salt and black pepper to taste
Directions
- Combine zucchini, eggs, and onion in medium bowl.
- Heat oil in a large non-stick skillet over medium low heat. Drop zucchini mixture by ΒΌ cupfuls into skillet, pressing out slightly to from pancakes.
- Cook approximately 5 minutes per side or until golden brown.
