Veggie Basil Sandwich (gluten free, vegetarian)

Ingredients
- 2 Slices of Bread (I use Gluten free Udi's bread it's small and fits the veggies just perfectly)
- 2 slices of Eggplant
- 2 slices of Red Pepper
- 2 Slices of Tomato
- 2 Slices of Squash
- Havarti Dill Cheese
- Sage Derby Cheese
- a pinch of olive oil
Directions
- You can grill the veggies on the grill or easily in a skillet for a few mins until soft.
- Lay eggplant, squash, red pepper, then tomato on bread.
- Add a few thin slices of Harvarti Dill cheese on one and sage derby cheese on the other.
- Put it in the oven on broil for about 2 or 3 mins or until the edges of the bread is browned and the cheese is melted slightly or you can cook it on the grill until the cheese has melted a little.
- Top it off with a large piece of fresh sweet basil.
