Veggie Basil Sandwich Recipe Image

Veggie Basil Sandwich (gluten free, vegetarian)

Servings: 1 servings
Ingredients
  • 2 Slices of Bread (I use Gluten free Udi's bread it's small and fits the veggies just perfectly)
  • 2 slices of Eggplant
  • 2 slices of Red Pepper
  • 2 Slices of Tomato
  • 2 Slices of Squash
  • Havarti Dill Cheese
  • Sage Derby Cheese
  • a pinch of olive oil
Directions
  1. You can grill the veggies on the grill or easily in a skillet for a few mins until soft.
  2. Lay eggplant, squash, red pepper, then tomato on bread.
  3. Add a few thin slices of Harvarti Dill cheese on one and sage derby cheese on the other.
  4. Put it in the oven on broil for about 2 or 3 mins or until the edges of the bread is browned and the cheese is melted slightly or you can cook it on the grill until the cheese has melted a little.
  5. Top it off with a large piece of fresh sweet basil.
