Terrific Taco Meat (plus kid-friendly pasta dish)

This recipe is kid-tested and mom-approved. It's packed with protein and vegetables (my kids don't seem to notice). We use it for tacos, tostadas, taco salads and taco pasta. I've been known to make a triple batch and store several containers in the freezer for an easy weekday meal.

Ingredients
- 1 pound Ground Beef or Ground Turkey
- 1 15 oz Can Black Beans, drained
- 1 cup Salsa (I like Pace Thick & Chunky)
Directions
- Brown the ground beef or turkey then drain off any excess fat.
- Combine the browned meat, black beans and salsa. The mixture will be on the soupy side at this point.
- Simmer the mixture over medium heat, stirring frequently, until the excess moisture is cooked off (20 minutes maybe). Once the excess moisture has cooked off the mixture should have a nice thick consistency perfect for tacos, tostadas or taco salads.
- For a great kid-friendly pasta dish combine about half of the taco meat, rice pasta (cooked very al dente) and cheddar cheese. Pour pasta mixture into a baking dish, top with crumbled corn chips and bake at 350 until bubbly (20-30 minutes).
