Terrific Taco Meat (plus kid-friendly pasta dish)

This recipe is kid-tested and mom-approved. It's packed with protein and vegetables (my kids don't seem to notice). We use it for tacos, tostadas, taco salads and taco pasta. I've been known to make a triple batch and store several containers in the freezer for an easy weekday meal.

Ingredients
  • 1 pound Ground Beef or Ground Turkey
  • 1 15 oz Can Black Beans, drained
  • 1 cup Salsa (I like Pace Thick & Chunky)
Directions
  1. Brown the ground beef or turkey then drain off any excess fat.
  2. Combine the browned meat, black beans and salsa. The mixture will be on the soupy side at this point.
  3. Simmer the mixture over medium heat, stirring frequently, until the excess moisture is cooked off (20 minutes maybe). Once the excess moisture has cooked off the mixture should have a nice thick consistency perfect for tacos, tostadas or taco salads.
  • For a great kid-friendly pasta dish combine about half of the taco meat, rice pasta (cooked very al dente) and cheddar cheese. Pour pasta mixture into a baking dish, top with crumbled corn chips and bake at 350 until bubbly (20-30 minutes).
