Susan's tacos (gluten free, can be dairy free)

I mashed together one of my favorite Cuban recipes with a desire for a better taco.

Ingredients
  • ground beef or buffalo meat
  • 1/2 onion
  • 1/2 bulb of garlic
  • sea salt and pepper to taste
  • 1/2 green pepper
  • 1/4 cup olive juice from jar
  • 10 olives
  • spoonful of coconut oil
  • handful of fresh cilantro
  • 1 avocado and 1/2 cup sour cream (if can't tolerate dairy add a few drops of coconut milk or rice milk)
  • corn shells or rice paper wraps
Directions
  1. Oil pan with coconut oil.
  2. Add minced garlic, green pepper and onions. Cook until translucent on low heat. Add ground meat. Cook on medium heat. Stir in olive juice and olives when meat looks like it only needs about another 5 minutes to cook.
  3. Take the avocado and place in a food processor. Whip until it has the consistency of whipped cream. Spoon meat into shells or wraps. Top with fresh cilantro and the avocado. Enjoy!
