Pad Thai (gluten free, dairy free)

Servings: 4 servings

    Ingredients

    • 13 ounces package of rice noodles
    • 1 tablespoon rice vinegar
    • 3 cloves of garlic
    • 2 eggs
    • 8 ounces (or desired amount) uncooked shrimp

    Sauce

    • 1/4 cup fish sauce fish saue
    • 3/8 cup sugar

    Garnish

    • green onions
    • peanuts
    • beansprouts
    • cilantro
    • red pepper flakes
    • 1 tablespoon paprika
    • 1 tablespoon tamarind paste
    Directions
    1. mix all sauce ingredients in a bowl and set aside
    2. put noodles in hot water to soften, then drain and have them waiting (you may need to poke them a little as they soften so they don't stick together)
    3. heat oil in a wok
    4. when oil is hot, add garlic, then add shrimp and cook 1 min. or so
    5. add eggs and scramble around shrimp
    6. add noodles and sauce, toss to coat
    7. serve with garnishes in small bowls so that people can add their own
