Pad Thai (gluten free, dairy free)

Servings: 4 servings
Ingredients- 13 ounces package of rice noodles
- 1 tablespoon rice vinegar
- 3 cloves of garlic
- 2 eggs
- 8 ounces (or desired amount) uncooked shrimp
Sauce- 1/4 cup fish sauce fish saue
- 3/8 cup sugar
Garnish- green onions
- peanuts
- beansprouts
- cilantro
- red pepper flakes
- 1 tablespoon paprika
- 1 tablespoon tamarind paste
- 1/4 cup fish sauce fish saue

Directions
- mix all sauce ingredients in a bowl and set aside
- put noodles in hot water to soften, then drain and have them waiting (you may need to poke them a little as they soften so they don't stick together)
- heat oil in a wok
- when oil is hot, add garlic, then add shrimp and cook 1 min. or so
- add eggs and scramble around shrimp
- add noodles and sauce, toss to coat
- serve with garnishes in small bowls so that people can add their own
