Mom's Amazing Fettuccini Alfredo (gluten free)

Servings: 4 cups
Ingredients
- 1 pound pad thai style rice noodles or gf fettuccini
- 1 stick butter
- 1/2 teaspoon granulated garlic (feel free to use fresh, minced if you prefer)
- salt
- 1/2 cup cream (may need a little more)
- 1 cup parmesan cheese (may not use it all)
Directions
- Cook pasta according to instructions. Drain.
- In a pan large enough to hold all the pasta plus sauce melt 2/3 stick butter and 1/2 tsp granulated garlic (can add more if you like more garlic) to taste.
- Add cooked pasta to the melted butter mixture, coat pasta and salt to taste.
- Add 1/2 cup cream and mix, then add 5-6 Tablespoons parmesan cheese. You will use the remaining cream and parmesan to adjust the consistency of the pasta - add more cream if you want a looser sauce, add more parmesan to thicken the sauce up. Bon Appetit!
