Lexington Style BBQ (gluten free, dairy free, egg free)

Lexington, North Carolina has long been known for their pork bbq. The pork shoulders are smoked, pulled, and soak in the dip. The slaw is a pinkish slaw and is traditionally served with the bbq (on top of a sandwich or next to it on the tray). Most people order hush puppies with it. I'm still working on a GF hush puppy that is close to what you'd get here in Lexington. This dip is very similar to what you'd get at Lexington BBQ (Honeymonk's).

Ingredients
- 2 cups ketchup
- 4 cups apple cider vinegar
- 1 tbsp chili powder
- 1 tbsp white pepper
- 1 tbsp lawry's seasoned salt
- .5 tsp paprika
- 1 tsp onion flakes
- .5 tbsp spicy mustard
- .5 tsp hickory spice powder
- .5 tsp garlic flakes
- 10 shakes Tabasco sauce
- 3/4 cup brown sugar
Directions
Place ingredients in large stockpot or crock pot. For traditional BBQ, add pork tenderloin or pork shoulder. Simmer until you can pull it apart with a fork. We also cook chicken the same way & it is delicious.
