Impossible Taco Pie (gluten free)

Servings: 8 pieces
Ingredients
- 1 pound Ground beef, turkey or chicken
- 1/4 Onion sliced
- 3/4 cup GF roll mix (I use Kinnikinnick)
- 1/4 cup Salsa
- 11 ounces Can of corn or mexican corn drained
- 1 1/4 cups Shredded Cheddar Cheese
- 1/4 cup Sliced Black Olives (optional)
- 1 cup Milk
- 3 Eggs
- 1/2 teaspoon Each Cumin, Garlic Salt & Red Pepper
Directions
- Brown meat and onion in a large pan. Drain.
- In the pan, add all the other ingredients and stir. Reserving 1/4 cup of cheese.
- Pour mixture into greased pie plate.
- Bake at 400° for 30 minutes. Top with remaining cheese and bake for another 5 minutes.
- Serve with extra salsa on the side.
