Hawaiian Haystacks (gluten free, egg free, dairy free)

FULLY CUSTOMIZABLE INGREDIENTS! Simple, fun, healthy meal! Everyone enjoys assembling their own to their liking. Leave out any ingredients you don't like or can't eat and add in any others you can think of!

Servings: 8 servings
Ingredients
  • 1 whole Cooked rotisserie chicken (Make sure any seasonings are GF)
  • 1/2 cup Tapioca Flour or Rice Flour
  • 4 cups GF chicken broth
  • 2 cups green pepper chopped
  • 2 cups celery chopped
  • 2 cups carrots shredded
  • 4 cups rice cooked
  • 1 bag rice noodles
  • 1 cup green onions diced
  • 1/4 Cabbage finely shredded
  • 2 cans water chestnuts
  • 2 cans pineapple tidbits drained
  • 1/2 cup coconut toasted
  • 1 cup almonds or cashews sliced and toasted
Directions
**LEAVE OFF any ingredients you can't eat or don't like - add others if you want.
  1. Remove chicken from bone and cut into bite sized pieces
  2. Mix gf flour with a little water then stir into broth and simmer in medium saucepan until thickened enough to make the gravy.
  3. Microwave the bell pepper, celery and carrot until cooked through but still firm
  4. Place all ingredients in separate bowls and have people make their own “haystacks” layering food – rice, chicken, gravy, veggies, rice noodles, pineapple, coconut, then nuts
  5. Makes 8-10 servings
