Grilled Fish

Simple Grilling recipe. Great with rice and a spinach salad.

Ingredients
- 2 TBLS lime or lemon juice
- 1-2 TBLS butter melted
- 1/2 tsp dried Thyme
- 1/2 tsp grated lime or lemon peel
- 1/4 tsp salt
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 4 fish fillets -orange roughy, cat, red snapper or trout (about 6 ounces ea)
Directions
- Combine juice, butter and seasonings in a shallow bowl.
- Dip fillets in lime mixture on both sides. Lay on tinfoil and cover.
- Grill covered - I used foil in a (pampered chef basket) for 10-12 mins over med-hot heat or until fish is flakes with a fork and is not opaque.
