Grilled Fish

Simple Grilling recipe. Great with rice and a spinach salad.

Servings: 4 servings
Ingredients
  • 2 TBLS lime or lemon juice
  • 1-2 TBLS butter melted
  • 1/2 tsp dried Thyme
  • 1/2 tsp grated lime or lemon peel
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 4 fish fillets -orange roughy, cat, red snapper or trout (about 6 ounces ea)
Directions
  1. Combine juice, butter and seasonings in a shallow bowl.
  2. Dip fillets in lime mixture on both sides. Lay on tinfoil and cover.
  3. Grill covered - I used foil in a (pampered chef basket) for 10-12 mins over med-hot heat or until fish is flakes with a fork and is not opaque.
