Grilled Eggplant Parmesan (gluten free, egg free, vegetarian)

I used pre-made tomato sauce, but I will probably make my own in the future.

Ingredients
- 1 large Eggplant
- 2 larges balls of fresh mozzarella or cups of shredded mozzarella. *you can substitute any cheese per taste/allergies*
- Olive oil
- 1-2 clove Garlic - to taste
- 2 cups tomato sauce
Directions
- Slice the eggplant 1/4 inch thick, saute in olive oil and garlic (1-2 cloves to taste) until soft. You may have to use a lot of olive oil as the eggplant soaks it up.
- Cover with sauce, spice to taste. Top with cheese. I did half fresh mozzarella and half shredded bagged mozzarella. Again use whatever cheese you prefer.
- Bake at 350 until sauce warms and cheese is melted. Usually 15 minutes
