Grilled Chicken with Eggplant and Tomato Sauce (gluten free, egg free, can be dairy free)

Only 30 minutes and you'll have a delicious company-worthy meal! Just leave off the cheese for dairy free.

Servings: 8 servings
Ingredients
  • 1/4 cup olive oil
  • 8 chicken breast cutlets
  • salt and pepper
  • 1/2 teaspoon oregano
  • 1 eggplant cut into 8 slices
  • 1 - 28 ounces can of fire roasted crushed tomatoes
  • 1 pound smoked mozzarella sliced into 8 slices
  • 8 leaves basil leaves torn, or dried
Directions
  1. Grill or Saute Chicken Breasts and set aside (can be done the day before)
  2. Brush eggplant with olive oil, season with salt and pepper and grill or saute about 10 minutes.
  3. While chicken and eggplant cook, add remaining oil to a pan and cook onion and garlic until onion is tender, about 6 minutes.
  4. Add the tomatoes, oregano, salt and pepper and heat through.
  5. On a baking sheet, spread out chicken breasts. Layer 1 eggplant slice on each chicken breast, a little sauce, and a slice of mozzarella.
  6. Broil until mozzarella is bubbly. Top with a sprinkling of basil.
  7. Serve with remaining sauce.
