Grilled Chicken with Eggplant and Tomato Sauce (gluten free, egg free, can be dairy free)

Ingredients
- 1/4 cup olive oil
- 8 chicken breast cutlets
- salt and pepper
- 1/2 teaspoon oregano
- 1 eggplant cut into 8 slices
- 1 - 28 ounces can of fire roasted crushed tomatoes
- 1 pound smoked mozzarella sliced into 8 slices
- 8 leaves basil leaves torn, or dried
Directions
- Grill or Saute Chicken Breasts and set aside (can be done the day before)
- Brush eggplant with olive oil, season with salt and pepper and grill or saute about 10 minutes.
- While chicken and eggplant cook, add remaining oil to a pan and cook onion and garlic until onion is tender, about 6 minutes.
- Add the tomatoes, oregano, salt and pepper and heat through.
- On a baking sheet, spread out chicken breasts. Layer 1 eggplant slice on each chicken breast, a little sauce, and a slice of mozzarella.
- Broil until mozzarella is bubbly. Top with a sprinkling of basil.
- Serve with remaining sauce.
