Granny's Gone Nuts Salad (w/candied nuts recipe included)

The recipe for the nuts are included as I have not yet found them GF in the store. Can be made ahead.Store left over nuts in an airtight container.

Servings: 4 servings

    Ingredients:

    • Choose one; Bag of Romaine/Spinach / mixed greens

    Top salad with;

    • Granny Smith Apples Sliced
    • 2.5 - 3.5 oz-Crumble Feta cheese (I use Athenos)
    • Candied/glazed walnuts see recipe below.
    • Granny Smith Apples Sliced
    • Dressing- recipe to follow walnuts
    Directions
    Candied Walnuts(or pecans):
    1. Bake at 350 degrees
    2. 1 egg white 1 T water ½ C. brown sugar 1-2 tsp, cinnamon, Salt to taste-about ¼ - ½ tsp., 1 pound Walnuts(or pecans) use 1/2 lb for salad
    3. Beat egg white until frothy add water beat until stiff. Fold in walnuts. Stir in brown sugar, cinnamon and salt.
    4. Spread evenly oil sprayed cookie sheet.
    5. Bake for 30 min turning half way.
    6. Allow nuts to cool before serving.
    Dressing:
    1. in food processor pulse: 1 granny apple, 1/4 cup candied walnuts, 1 cup apple cider vinegar, 1/4 cup brown sugar and a pinch of salt - slowly add 1 1/2 cup vegetable/olive oil blend & process until incorporated.
    2. Assemble the salad- lettuce, apples, cheese and nuts.
    3. Drizzle the dressing over the top.
