Mexican Quiche (gluten free)

Three great options - buy a premade gluten free pie crust, a gf pie crust mix, or make this quiche crustless!

Ingredients
- 1 10 (or 2-8
- 4 cups Sliced Mushrooms
- 1 small Green bell pepper chopped
- 1/4 cup Black Olives chopped
- 3 Eggs
- 1 tablespoon Cornstarch
- 1/4 cup Milk
- 1/2 cup Picante Sauce
- 1/2 cup Mozzerella Cheese grated
- 1/2 cup Swiss Cheese grated
- 1/2 cup Cheddar Cheese grated
Directions
- Preheat oven to 350
- Combine mushrooms, bell peppers and olives
- In a separate bowl, beat eggs. Add flour, milk and picante sauce. Stir vegetables into egg mixture
- In a separate bowl, combine cheeses
- Layer 1/2 the vegetable and egg mixture in crust (or in directly in pie plate if you want a crustless quiche.) Sprinkle with cheese. Top with remaining vegetable and egg mixture. Quiche may be garnished with additional cheese, if desired.
- Bake 40-50 minutes or until firm and lightly browned.
