Mexican Quiche (gluten free)

Three great options - buy a premade gluten free pie crust, a gf pie crust mix, or make this quiche crustless!

Servings: 8 servings
Ingredients
  • 1 10 (or 2-8
  • 4 cups Sliced Mushrooms
  • 1 small Green bell pepper chopped
  • 1/4 cup Black Olives chopped
  • 3 Eggs
  • 1 tablespoon Cornstarch
  • 1/4 cup Milk
  • 1/2 cup Picante Sauce
  • 1/2 cup Mozzerella Cheese grated
  • 1/2 cup Swiss Cheese grated
  • 1/2 cup Cheddar Cheese grated
Directions
  1. Preheat oven to 350
  2. Combine mushrooms, bell peppers and olives
  3. In a separate bowl, beat eggs. Add flour, milk and picante sauce. Stir vegetables into egg mixture
  4. In a separate bowl, combine cheeses
  5. Layer 1/2 the vegetable and egg mixture in crust (or in directly in pie plate if you want a crustless quiche.) Sprinkle with cheese. Top with remaining vegetable and egg mixture. Quiche may be garnished with additional cheese, if desired.
  6. Bake 40-50 minutes or until firm and lightly browned.
Serves 6-8
