GF Chicken and Dumplings

A yummy twist on traditional Chicken and Dumplings. Perfect comfort food for cold weather!

Ingredients
- 3/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 1/4 tsp salt (more to taste)
- 1/4 tsp pepper
- 2 tsp olive oil
- 1/4 cup GF flour
- 4 cups reduced salt chicken broth (divided)
- 1 cup water
- 2 cups frozen french cut green beans
- 1 1/2 cups sliced onions
- 1 cup coarsely shredded carrot
- 1/2 tsp marjoram
- 2/3 cup Gluten Free Bisquick
- 1/3 cup GF cornmeal
- 1/4 cup shredded cheddar cheese
- 1/3 cup skim milk
- 1/4 tsp garlic powder
Directions
- Sprinkle chicken with salt and pepper, fry in olive oil until brown and juices run clear.
- In large saucepan, combine GF flour and 1/2 cup broth until smooth. Stir in water and remaining broth. Add beans, onions, carrots, marjoram and chicken. Bring to boil. Reduce heat, simmer, uncovered about 10 minutes.
- Meanwhile, in small bowl, combine GF Bisquick, cornmeal, garlic powder and cheese. Stir in milk until moistened (I had to add more milk because it was too dry).
- Drop batter in 8 mounds onto simmering "soup".
- Cover and simmer for 15 minutes or until you insert a toothpick into the dumplings and it comes out clean. Do not lift cover while dumplings are cooking. Enjoy!
I made something similar to this the other day, but without the dumplings. Sounds great with the dumplings. I will have to give them a go, however, without the cheese and with dairy/soy free milk. Thanks!!
