    40 min
Servings: 4 servings
Ingredients
  • ‎3/4 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 tsp salt (more to taste)
  • 1/4 tsp pepper
  • 2 tsp olive oil
  • 1/4 cup GF flour
  • 4 cups reduced salt chicken broth (divided)
  • 1 cup water
  • 2 cups frozen french cut green beans
  • 1 1/2 cups sliced onions
  • 1 cup coarsely shredded carrot
  • 1/2 tsp marjoram
  • 2/3 cup Gluten Free Bisquick
  • 1/3 cup GF cornmeal
  • 1/4 cup shredded cheddar cheese
  • 1/3 cup skim milk
  • 1/4 tsp garlic powder
Directions
  1. Sprinkle chicken with salt and pepper, fry in olive oil until brown and juices run clear.
  2. In large saucepan, combine GF flour and 1/2 cup broth until smooth. Stir in water and remaining broth. Add beans, onions, carrots, marjoram and chicken. Bring to boil. Reduce heat, simmer, uncovered about 10 minutes.
  3. Meanwhile, in small bowl, combine GF Bisquick, cornmeal, garlic powder and cheese. Stir in milk until moistened (I had to add more milk because it was too dry).
  4. Drop batter in 8 mounds onto simmering "soup".
  5. Cover and simmer for 15 minutes or until you insert a toothpick into the dumplings and it comes out clean. Do not lift cover while dumplings are cooking. Enjoy!

I made something similar to this the other day, but without the dumplings. Sounds great with the dumplings. I will have to give them a go, however, without the cheese and with dairy/soy free milk. Thanks!!
