G-Free Orange Chicken (my take on chinese) (soy free)

This is my take on an orange chicken chinese dish without using soy sauce. Awesome! [Gluten Freeville note: Theresa's version is unbattered, but if you want to make it in a batter first, I would use rice flour, corn starch or GF All purpose flour in step one to coat the chicken before cooking]

Servings: 2 servings
Ingredients:- 5-6 chicken tenders (or 2 chicken breasts cut into strips)
- 2/3 cups cooked white rice (instant works great and saves time)
- 1 tbs of butter
- 3 tbs of maple syrup
- 1/2 white onion, chopped
- 1/2 cup of chopped mushrooms
- 1/2 jar (or more to flavor) of Orange Marmalade
- 3 cloves garlic, chopped or grated
Optional Ingredients:- 3-4 tbs of your favorite hot sauce (this makes it a sweet and sour kind of sauce)
- Also you can always add veggies to make it more of a stir fry. Veggies of your choice.

Directions
- In one frying pan add butter and chicken and cook until chicken is almost done. Then add the onions and mushrooms the last 3-4 minutes.
- In separate small sauce pan add the maple syrup, orange marmalade, garlic, salt and pepper. Simmer on very low heat and stir until it creates a glaze texture.
- Once the chicken, onions, and mushrooms are cooked, spoon them into the sauce leaving the left over butter in frying pan. (the extra butter can make the sauce a little to runny.) simmer on low for 3 minutes until chicken is fully coated.
- Make your rice. Then add your Orange chicken to your rice!
