Egg and Cheese Puff (gluten free, vegetarian)

Servings: 6 servings
Ingredients
  • 4 eggs
  • 1 1/2 cups cottage cheese
  • 1 cup cheddar cheese, grated
  • 1/4 cup parmesan cheese, grated
  • 1 small onion, diced
  • 1 cup cooked spinach, drained and patted dry
  • 2 teaspoons minced garlic
Directions
  1. Preheat oven to 350.
  2. In a medium bowl, beat eggs.
  3. Add all other ingredients to eggs and mix well.
  4. Pour mixture into greased 9 inch quiche baking dish and bake for 45 minutes at 350.
