Easy Lasagna Pie (gluten free)

Simple and frugal, here's a twist on lasagna that everyone will love! Double the recipe and make it in a 9 x 13 pan if you want to feed a crowd.

Ingredients
  • 1 pound lean ground beef
  • 1/2 cup tomato sauce
  • 1/3 cup ricotta cheese
  • 3 tablespoons parmesan cheese grated
  • 1/2 teaspoon salt
  • 1 cup mozzarella cheese
  • 1/2 cup gluten free biscuit or roll mix*
  • 1 cup milk or water**
  • 2 eggs
  • additional thick and chunky tomato sauce heated
Directions
  1. Brown meat over medium high heat and then drain. stir in tomato sauce.
  2. Mix ricotta cheese, parmesan cheese, and salt in a small bowl. Spread half the beef mixture in a greased 9" pie plate. Drop cheese mixture by spoonfuls onto beef mixture. Sprinkle half of the mozzarella. top with remaining beef mixture.
  3. Stir biscuit mix and eggs in medium bowl with whisk until blended. pout into pie plate.
  4. Bake for 20 - 25 minutes until knife inserted in the center comes out clean. Sprinkle with remaining 1/2 cup of mozzarella and bake 2-3 minutes longer. Let stand 5 minutes. Serve with additional heated tomato sauce.
* I use Kinnikinnick Bread and Bun Mix ** The mix I use calls for "milk or water"
