Easy Lasagna Pie (gluten free)

Simple and frugal, here's a twist on lasagna that everyone will love! Double the recipe and make it in a 9 x 13 pan if you want to feed a crowd.

Ingredients
- 1 pound lean ground beef
- 1/2 cup tomato sauce
- 1/3 cup ricotta cheese
- 3 tablespoons parmesan cheese grated
- 1/2 teaspoon salt
- 1 cup mozzarella cheese
- 1/2 cup gluten free biscuit or roll mix*
- 1 cup milk or water**
- 2 eggs
- additional thick and chunky tomato sauce heated
Directions
- Brown meat over medium high heat and then drain. stir in tomato sauce.
- Mix ricotta cheese, parmesan cheese, and salt in a small bowl. Spread half the beef mixture in a greased 9" pie plate. Drop cheese mixture by spoonfuls onto beef mixture. Sprinkle half of the mozzarella. top with remaining beef mixture.
- Stir biscuit mix and eggs in medium bowl with whisk until blended. pout into pie plate.
- Bake for 20 - 25 minutes until knife inserted in the center comes out clean. Sprinkle with remaining 1/2 cup of mozzarella and bake 2-3 minutes longer. Let stand 5 minutes. Serve with additional heated tomato sauce.
