Curried Chicken Salad

Replace the chicken with tofu for a different twist. Make them smaller for an appetizer, or use for a great sandwich filling on your favorite GF bread.

Servings: 6 servings
Ingredients
- 3 cups cooked cubed chicken
- 1 can Sliced water chestnuts, drained
- 1 can (1ounces) mandarin oranges, drained
- 3/4 cup mayonnaise (or plain yogurt)
- 1 teaspoon curry powder
- 1 1/2 teaspoons gluten free soy sauce
- 1 1/2 teaspoons lemon juice
- 1 bag (10 ounces) romaine lettuce
Directions
- Combine chicken, water chestnuts, and oranges. Set aside.
- In a bowl, combine mayonnaise, curry, soy sauce, and lemon juice. Add chicken to dressing mixture.
- Chill until ready to serve.
- Serve on beds of lettuce (or try hollowed out tomatoes.)
- Top with sliced almonds (optional)

Hi Mary- Spice Islands and McCormick are the spices I usually buy and most except for the spice mixes are gluten free. For this, I have Spice Islands Curry Powder, which is listed as gluten free.
