Curried Chicken Salad

Replace the chicken with tofu for a different twist. Make them smaller for an appetizer, or use for a great sandwich filling on your favorite GF bread.
Details
Servings: 6 servings
Ingredients
  • 3 cups cooked cubed chicken
  • 1 can Sliced water chestnuts, drained
  • 1 can (1ounces) mandarin oranges, drained
  • 3/4 cup mayonnaise (or plain yogurt)
  • 1 teaspoon curry powder
  • 1 1/2 teaspoons gluten free soy sauce
  • 1 1/2 teaspoons lemon juice
  • 1 bag (10 ounces) romaine lettuce
Directions
  1. Combine chicken, water chestnuts, and oranges. Set aside.
  2. In a bowl, combine mayonnaise, curry, soy sauce, and lemon juice. Add chicken to dressing mixture.
  3. Chill until ready to serve.
  4. Serve on beds of lettuce (or try hollowed out tomatoes.)
  5. Top with sliced almonds (optional)

    Hi Mary- Spice Islands and McCormick are the spices I usually buy and most except for the spice mixes are gluten free. For this, I have Spice Islands Curry Powder, which is listed as gluten free.
