Coconut Crusted Mahi Mahi

This is a sweet and spicy way to enjoy any type of seafood. I like it on Mahi Mahi.

Servings: 4 servings
Ingredients
- 1/2 cup Kinnikinnick GF panko breadcrumbs (could use GF cracker or bread crumbs)
- 1/4 cup sweetened flaked coconut confirm Gluten Free status
- 1 tbsp all-purpose GF flour
- ΒΌ tsp of cayenne pepper
- sea salt and pepper to taste
- 2 tbsp butter, melted or olive oil
- cooking oil spray
- 4 mahi mahi fillets (about 6 oz each)
Directions
- Preheat the oven to 400 degrees.
- In a small bowl, mix all dry ingredients.
- Line a baking sheet with parchment paper and spray with cooking oil spray.
- Dip fillets in water and roll in dry ingredients. Pat down mixture on top to ensure liberal coverage.
- Place the mahi mahi fillets on the baking sheet.
- Drizzle with melted butter or olive oil.
- Bake for about 15 minutes - until the crust is golden and the fish flakes with a fork.
Wow, this sounds delicious! (And I don't even like coconut!) Definitely will try this for my kiddos; 11-y-o has ASD and sensory issues and will only eat certain foods (like fish) if they're breaded. Can't wait to see his response :)
