Chicken Primavera Pie Recipe Image

Chicken Primavera Pie (gluten free)

I find that any main dish with a bready feel is comfort food in my house. Who would believe that a main dish could be this easy and delicious and have a zillion variations. Impossibly easy and frugal, everyone in the family will love this! Double the ingredients if you want to make it in a 9 x 13 pan and feed a crowd.

Servings: 6 servings
Ingredients
  • 1 1/2 cups cooked chicken
  • 1 16 oz. bag of frozen mixed veggies
  • 1/3 cup parmesan cheese - grated
  • 1/2 cup gluten free biscuit/roll mix*
  • 1 cup milk or water**
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup Marinara sauce (optional)
Directions
  1. Saute cubed chicken and frozen vegetables in a pan until chicken is browned.
  2. Pour chicken and veggies into the bottom of a greased 9" pie plate.
  3. Stir remaining ingredients together and pour over top of chicken.
  4. Bake at 400° for 20 - 25 minutes, until knife inserted in center comes out clean. Let stand 5 minutes before serving.
  5. Top with a spoonful of marinara sauce (optional)
*I usually use Kinnikinnick Bread and Bun Mix or you can use the new Gluten Free Bisquick **The mix I use calls for "milk or water"

    I tried this recipe with the Bisquick Gluten Free. I forgot to put the eggs in, but I think that the liquid called for might be too much for the Bisquick. I might try this again and use half the liquid, as even after more than an hour of baking, the Bisquick did not set.

    But it did end up like a nice, thick gravy, which I can't really complain about.

    Jeni- SOrry it didn't come out well for you! I've done it with Kinnikinnick and Bisquick and it came out great. Maybe the eggs are the key??
