Cabbage Casserole (gluten free, egg free, vegetarian)

If you replace the mozzarella with dairy free cheese, this recipe is also dairy free. I love this dish, I actually service it over the fish, Tilapia. But it's great by itself.

Servings: 4 servings
Ingredients
  • 1 head of Cabbage
  • 3 Small to medium Zucchinis
  • 1 large Onion
  • 1 cup Cup Of Rice ( I use Brown Rice )
  • 1 - 26 ounces Jar of your favorite Spaghetti Sauce
  • 1 cup of Water
  • 8 ounces Mozzarella Cheese 1/4 inch cubes
  • 1 cup Olive Oil
Directions
  1. Shred Cabbage
  2. Line the bottom of a 9 x 13 baking dish with cabbage
  3. Arrange cheese over Cabbage.
  4. Dice Zucchinis and Onion, Sautee in Olive Oil
  5. Add Spaghetti Sauce, Water and Rice to Zucchini and Onion, pour over Cabbage and Cheese.
  6. Cover tightly with foil. Bake 350 for 1 hour 30 minutes.
