Cabbage Casserole (gluten free, egg free, vegetarian)

If you replace the mozzarella with dairy free cheese, this recipe is also dairy free. I love this dish, I actually service it over the fish, Tilapia. But it's great by itself.

Servings: 4 servings
Ingredients
- 1 head of Cabbage
- 3 Small to medium Zucchinis
- 1 large Onion
- 1 cup Cup Of Rice ( I use Brown Rice )
- 1 - 26 ounces Jar of your favorite Spaghetti Sauce
- 1 cup of Water
- 8 ounces Mozzarella Cheese 1/4 inch cubes
- 1 cup Olive Oil
Directions
- Shred Cabbage
- Line the bottom of a 9 x 13 baking dish with cabbage
- Arrange cheese over Cabbage.
- Dice Zucchinis and Onion, Sautee in Olive Oil
- Add Spaghetti Sauce, Water and Rice to Zucchini and Onion, pour over Cabbage and Cheese.
- Cover tightly with foil. Bake 350 for 1 hour 30 minutes.
