Arriba Fajitas!!!!

I received this recipe many years ago and modified it GF. Great for a get together:) Great toppings - green onions, Pico De Gallo, shredded cheese, sour cream, guacamole, and/or chopped cilantro.

Servings: 8 servings
Ingredients
- 2 1/2 pounds Skirt Steak or boneless skinless chicken breast
- 1/4 cup ground pepper
- 1/4 cup garlic powder or 4 minced cloves
- 5 ounce bottle Worcestershire Sauce (Lea & Perrin)
- 1/4 - 1/2 cup ground Cumin or Chipotle (to taste)
- 2 yellow onions sliced
- 2 bell /poblano peppers sliced (optional)
- 1 pint Veg Oil or canola
- 1 bottle beer (Red Bridge,Gryst) Or 1 1/2 Cups GF White Vinegar
- Juice of 5 limes
Directions
- In separate containers/ziplock bags place meat/chicken in one and veggies in the other.
- In a bowl mix remaining ingredients (ground pepper,garlic,Worcestershire Sauce,cumin/chipotle,lime juice,oil,and beer/vinegar).
- Pour into each container/bag with meat/chicken & separate veggies covering generously. Seal tightly and refrigerate 4 hours - overnight. (Ziplock on a plate)
- Ready to grill-Medium High heat. Discard marinade and grill meat for 5 on each side until done.
- Allow to rest for 5-10 mins then carve into thin slices.
- For veggies- a grill basket or tinfoil works great(about 15mins).
- Serve on Corn tortillas.
Did you make a mistake on the measurement on the cumin? It should be a teaspoon, or at the very largest, a tablespoon, not a cup.
