30 Minute Paella Recipe Image

30 Minute Paella (gluten free, dairy free, egg free)

Servings: 6 servings
Ingredients
  • 3 slices bacon (finely diced)
  • 2 chicken breasts (boneless, skinless – cooked and diced)
  • 1/2 green pepper (diced)
  • 1/2 red pepper (diced)
  • 1 large onion (diced)
  • 2 cups uncooked minute style rice*
  • 2 cups water
  • 1 teaspoon tumeric
  • 1 teaspoon salt
  • 16 ounces tiny shrimp (cooked)
  • 1 cup frozen peas
Directions
  1. Cook bacon in a large skillet over high heat until browned, then remove.
  2. Saute chicken for 3 minutes, then add bell peppers and onion and cook for another 5.
  3. Drain any extra bacon grease (I usually have none-I use low fat turkey bacon).
  4. Stir in rice, water, tumeric and salt. Cover and reduce to a simmer for 10 minutes.
  5. Add shrimp, cooked bacon and peas and simmer, uncovered for 10 minutes until liquid is evaporated.
* If you choose not to use quick cooking rice, add extra time to accommodate
