30 Minute Paella (gluten free, dairy free, egg free)

Servings: 6 servings
Ingredients
- 3 slices bacon (finely diced)
- 2 chicken breasts (boneless, skinless – cooked and diced)
- 1/2 green pepper (diced)
- 1/2 red pepper (diced)
- 1 large onion (diced)
- 2 cups uncooked minute style rice*
- 2 cups water
- 1 teaspoon tumeric
- 1 teaspoon salt
- 16 ounces tiny shrimp (cooked)
- 1 cup frozen peas
Directions
- Cook bacon in a large skillet over high heat until browned, then remove.
- Saute chicken for 3 minutes, then add bell peppers and onion and cook for another 5.
- Drain any extra bacon grease (I usually have none-I use low fat turkey bacon).
- Stir in rice, water, tumeric and salt. Cover and reduce to a simmer for 10 minutes.
- Add shrimp, cooked bacon and peas and simmer, uncovered for 10 minutes until liquid is evaporated.
