White Chocolate Pecan Sandies

A perfect little cookie for any occasion! If you use a different flour mix without a rising agent in it, add 1 1/2 teaspoons of xanthan gum to the recipe.

Servings: 3 dozen
  • 1 1/4 cups light brown sugar
  • 3/4 cup shortening
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 3/4 cups Jules Gluten Free Flour Blend
  • 1 cup white chocolate chips (I use Ghirardelli)
  • 1 cup chopped pecans
  1. Mix brown sugar, shortening, egg and vanilla on high until fluffy.
  2. Add flour, baking powder and salt. Mix until well blended.
  3. Stir in chips and nuts.
  4. Scoop by teaspoonfuls onto parchment paper lined baking sheet.
  5. Bake at 350 for 12 minutes.

    Nancy, I have to give these a try - the white chocolate addition looks amazing! I finally got around to posting my Pecan Sandies in honor of National Pecan Sandy Day (June 23!). I love a reason to celebrate cookies!
