White Chocolate Pecan Sandies

A perfect little cookie for any occasion! If you use a different flour mix without a rising agent in it, add 1 1/2 teaspoons of xanthan gum to the recipe.

Ingredients
- 1 1/4 cups light brown sugar
- 3/4 cup shortening
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 3/4 cups Jules Gluten Free Flour Blend
- 1 cup white chocolate chips (I use Ghirardelli)
- 1 cup chopped pecans
Directions
- Mix brown sugar, shortening, egg and vanilla on high until fluffy.
- Add flour, baking powder and salt. Mix until well blended.
- Stir in chips and nuts.
- Scoop by teaspoonfuls onto parchment paper lined baking sheet.
- Bake at 350 for 12 minutes.
Nancy, I have to give these a try - the white chocolate addition looks amazing! I finally got around to posting my Pecan Sandies in honor of National Pecan Sandy Day (June 23!). I love a reason to celebrate cookies!
