Vanilla Frosting (GF, dairy free, sugar free, egg free)

This is from Cooking Free, by Carol Fenster, p.201 (see my review of this in the book review section) An alternative to a traditional powdered sugar frosting if you need it.

Ingredients
  • 12 ounces Extra Firm Silken Tofu
  • 1/4 cup Fructose Powder or Splenda (or sugar)
  • 1 teaspoon Fresh Lemon Juice
  • 1 teaspoon Butter or Margarine (substitue oil if you need to)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Butter Flavored Extract
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Xanthan Gum
Directions
  1. Drain tofu thoroughly in a mesh sieve for at least 2 hours. Discard Liquid.
  2. Combine all ingredients in a food processor and process mixture until very smooth, scraping down sides with spatula. Use immediately.
Frosts one single-layer cake.
