Triple Chocolate Chip "Troll House" Cookies (gluten free)

I found this recipe on-line four years ago and do not know the original baker. It is a variation from the Nestle Toll House cookie recipe, except I do not use Nestle chocolate chips. I prefer brands like Ghiradelli.

Ingredients
- 2 eggs
- 1 cup (2 sticks) butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon GF vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups rice flour
- 1/2 cup potato flour
- 1/3 bag semi-sweet chocolate chips
- 1/3 bag milk chocolate chips
- 1/3 bag white chocolate chips
Directions
- Blend softened butter with egg; add sugar and brown sugar, vanilla, salt and baking soda. Blend/mix together.
- Add rice and potato flours and blend/mix. Mix in all flavors of chocolate chips.
- Scoop teaspoons or tablespoons of the dough on a lightly sprayed baking sheet.
- Bake at 350 degrees for 10-15 minutes (depending on cookie size), or until lightly browned.
