Triple Chocolate Chip "Troll House" Cookies (gluten free)

I found this recipe on-line four years ago and do not know the original baker. It is a variation from the Nestle Toll House cookie recipe, except I do not use Nestle chocolate chips. I prefer brands like Ghiradelli.

Servings: 24 pieces
Ingredients
  • 2 eggs
  • 1 cup (2 sticks) butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon GF vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups rice flour
  • 1/2 cup potato flour
  • 1/3 bag semi-sweet chocolate chips
  • 1/3 bag milk chocolate chips
  • 1/3 bag white chocolate chips
Directions
  1. Blend softened butter with egg; add sugar and brown sugar, vanilla, salt and baking soda. Blend/mix together.
  2. Add rice and potato flours and blend/mix. Mix in all flavors of chocolate chips.
  3. Scoop teaspoons or tablespoons of the dough on a lightly sprayed baking sheet.
  4. Bake at 350 degrees for 10-15 minutes (depending on cookie size), or until lightly browned.
