Pumpkin Whoopie Pies (GF, DF)

Ingredients

    Wet Ingredients:

    • 1 cup packed brown sugar
    • 1 1/2 cups canned pumpkin
    • 1/2 cup vegetable oil
    • 1/2 tsp vanilla
    • 1 large egg

    Dry Ingredients:

    • 1/2 cup each: sorghum flour, potato starch, tapioca starch
    • 1/2 tsp each: salt, baking powder, baking soda, xanthum gum
    • 1 tablespoon cinnamon
    • 1 1/2 tsp each: ground ginger, ground cloves

    Icing:

    • 1/4 cup butter
    • 1 1/2 cups icing sugar
    • 1/2 tsp vanilla
    • 4 oz. (1/2 cup) cream cheese
    Directions
    1. mix up the wet ingredients with a mixer.
    2. mix together dry ingredients in seperate bowl & get out lumps
    3. sprinkle flour mixture over the wet mixture, 1/3 at a time, and mix well after each.
    4. drop by tablespoon onto parchment lined baking sheets & flatten/swirl. leave about 1" space between each cookie
    5. bake 10-12 minutes at 350 degrees F until toothpick comes out clean. let cool slightly before transferring to rack.
    6. If you want to turn them into whoopie pies place a spoonful of cream cheese icing between the two cookies.. I'd maybe do cream cheese with marshmallow fluff instead. to make it df use tofutti cream cheese & df margarine of course :)

      Can I use all purpose gluten free flour instead of all the seperate flours?

      Know of any dairy free cream cheese that's also soy free? If so, that would be awesome because these sound tasty! :D

      Mine were FLUFFY. I am not using two to make the pies, I am cutting one in half, lengthwise with a sharp bread knife!!! And going to use Lyn's filling recipe next time!

      Brandy- I added a link above in the note section to Galaxy's new Dairy Free/Gluten Free cream cheese, but it does have soy. I don't know of one that doesn't, but I'll keep looking.

      Old fashioned whoopie pie filling: 1/2 C shortening 3/4 C confectioners sugar 6 Tblsp marshmallow Fluff 1 unbeaten egg white 1 teasp vanilla...Beat til fluffy (I always doubled this to really fill the whoopie pies) Whoopie pies are a staple here in NH!!!
