Poke Cake GF

I modified this recipe a few years ago GF but now it is easier with Betty Crockers GF cake mix:) Other GF cake mixes should work.
Details
Servings: 12 pieces
Ingredients
  • 1 pkg. (2-layer size)Betty Crocker Yellow Gluten Free cake mix
  • 1 cup boiling water
  • 1 pkg. (4-serving size) JELL-O Strawberry Flavor Gelatin GF
  • 1/2 cup cold water
  • 1 tub (8 oz.) COOL WHIP Whipped Topping GF, thawed
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
Directions
  1. Bake Cake according to package directions for 13X9 inch cake.
  2. Cool cake in pan about 20 mins.
  3. Poke with end of "wooden spoon"(or fork)about every 1/2 inch.
  4. STIR boiling water into dry gelatin mix in small bowl 2 min. until completely dissolved. Add cold water and stir.
  5. Pour the gelatin over the cake so it seeps into the holes.
  6. Refrigerate 3 hours
  7. Frost cake with thawed Cool Whip
  8. Arrange fruit to look like the American flag

    My GF Betty Crocker yellow cake mix only has instructions to bake an 8x8, 9x9 or 8-9" round, or 12 cupcakes. Am I missing the 9X13 somewhere?

    Add cold water and then stir... and then what? Do you let the jello cool? Do you pour it over the cake hot?

    I bet there is a step between 3. and 4. where you pour the jell-o over the top of the cake into the holes? ;-)

    Is cool whip really GF?? It has "food starch" undefined.I've avoided it because of that but would be thrilled if it was safe. Anyone??

    Yes. You let the cake and the jello cool to body temp or so. Then pour the Jello over the cake and allow to seep into the holes. I prefer to make holes with a large toothpick or skewer but that is a personal preference. I do not like the look of the fork holes. Then refrigerate and the jello will jell and make the cake striped inside. It is a pretty cake and makes a nice festive end to the meal for the Fourth.

    Linda- According to many sources I've seen, Cool whip is gluten free. Cecelia's shopping specifically lists Cool whip aerosol (extra creamy, lite and regular) as well as Cool Whip Topping (extra creamy, free, lite, original and sugar free) Cool Whip is a Kraft Product - their GF policy is to always list wheat, barley and rye specifically and if it's not mentioned, it's not there, so they say. ~nancy
