Lemon Squares Recipe Image

Lemon Squares (gluten free, can be grain free)

This is an old favorite from Pillsbury recipes I made gluten free. Great for the Fourth of July:)

Ingredients
  • 1 cup Bob's Redmill all-purpose flour or almond flour
  • 1/2 cup butter or margarine, softened
  • 1/4 cup powdered sugar
  • 1 cup granulated sugar
  • 2 teaspoons grated lemon peel, if desired
  • 2 tablespoons lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • Additional powdered sugar
Directions
  1. Heat oven to 350°F.
  2. In small bowl, mix flour, butter and 1/4 cup powdered sugar.
  3. Press in ungreased 8-inch or 9-inch square pan, building up 1/2-inch edge. Bake 20 minutes.
  4. In small bowl, beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.
  5. Bake 25 to 30 minutes or until almost no indentation remains when touched lightly in center. Cool completely, about 1 hour. Sprinkle with additional powdered sugar.
For squares, cut into 5 rows by 5 rows. High Altitude (3500-6500 ft): In step 1, bake 25 minutes. In step 3, bake 27 to 32 minutes.

      Andrea Wyckoff came up with a grain free, sugar free version:
      These are AWESOME! I made them last night with almond flour, and used honey instead of sugar. I used less than 1/2 cup of honey total & they turned out so yummy!

      Made these last night with Almond Flour. These are really Yummy! I will definitely be making these again
