Holiday Chocolate Butter Cookies

This is one of my favorite cookies from a recipe I found years ago by Land O Lakes and modified for GF. I have not found a GF marachino cherry but they are great in the middle of a thumb printed ball.

Servings: 3 dozen
Ingredients
  • 1 ½ C GF flour or GF Bobs Redmill, Pamela's
  • ½ C sugar
  • 1 t. GF almond exract
  • ¾ C Butter; softened
  • ¼ C GF unsweetened cocoa (I use Hersheys)
  • 1 egg yolk
Directions
  1. Preheat oven to 375°
  2. In large bowl combine all ingredients except flour and cocoa.
  3. Beat at medium speed until light and fluffy (2-3 mins.)
  4. Gradually add flour and cocoa until well mixed (2-3 mins).
  5. Shape rounded teaspoonfuls as desired (1” balls, 2”-3” logs, balls flattened, balls with indentations, etc) Or use cookie press.
  6. Place 1 inch apart on greased cookie sheets.
  7. Bake for 7-9 min at 375°, or until set.
  8. Cool. Dust or roll in confectioners sugar or decorate with melted GF chocolate chips, melted GF almond bark, nuts, or GF colored sugars.

    Vicki - Margarine or Earth Balance Buttery Sticks are a good option. According to Cecelia's Marketplace shopping guide, a few brands of GF almond extract are Kroger, Publix, McCormick, D&W Fresh Market. I don't know of any off-hand that are not gluten free, but reading the label is always a good idea.     just tried this recipe, with the Pamala's mix...
    it's dry and crumbly. i would suggest adding more eggs.

    Can this be made with dairy free margarine? Do you know if there is a dairyfree butter? I need GF and dairy free. Are all almond extracts GF? New to all of this. newly diagnosed. Thanks!! Vicki
