Gluten Free Shortbread Cookies

    Ingredients

    • 1 cup butter **
    • 2 cups gluten free flour mix (recipe to follow)
    • 1/2 cup white sugar

    So this is the gluten free flour mix that I make and use for a ton of different recipes ...

      I call it Grandmas flour Mix

      • 4 cups white rice flour
      • 1 1/3 cups potato starch flour
      • 2/3 cup tapioca flour
      • 2 Tbsp xanthan gum
      Directions
      1. Preheat oven to 300 degrees.
      2. Cream butter until soft, add in flour and sugar until smooth.
      3. Scoop dough onto greased cookie sheet and bake at 300° for 20 minutes.
      (Note from Gluten Freeville- Gluten Free cookies always work better when the baking sheet is lined with parchment paper!) Voila..thats it!! ** I found this amazing Butter-Vanilla extract by Lorann Professional Kitchen. I added a splash of this in case it wasn't buttery enough already!!

        it looks great,however i am also allergic to potatoes!!!!! any ideas on how to get around the potatoe flour?

        In 1992 my husband was diagnosed with prostate cancer and given a year to live. He chose not to have conventional therapy, but instead went the holistic route, which included an organic diet of grains and vegetables. Well, he lived until 2003, happy and healthy, but the diet darn near killed me. I did not know I was gluten intolerant, even after being in the hospital for up to 10 days at a time 3 different times during the '90's the doctors failed to give me a proper diagnosis. They wanted to cut out large sections of my insides but I knew this was not the answer. Once I figured it out with the help of the internet and a colonic therapist, things got a lot better for me. I am so grateful for your website, especially the sharing of recipes and other helpful information.

        I made this recipe today. It tastes wonderful, just like shortbread, but it is so fragile, there is no way to move them or store them. Any ideas?
