Chocolate Chip Cookies (Gluten Free)

I modified the recipe on the Nestle Tollhouse chocolate chips to be Gluten-free. They turned out REALLY good.

Servings: 5 dozen
Ingredients
- 1 1/4 cups Cornstarch
- 1 cup Potato Starch
- 2 1/4 teaspoons Xanthan Gum
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 cup Butter or Margarine
- 1 teaspoon Vanilla
- 2 eggs
- 1 cup Sugar
- 1 cup Brown Sugar
Directions
- Preheat oven to 350°.
- Combine starches, baking soda and salt in small bowl.
- Beat butter, sugar, brown sugar and vanilla in large mixer bowl until creamy. Add eggs one at at time, beating well after each addition. Gradually beat in starch mixture. Stir in chocolate chips.
- Drop by well-rounded teaspoons onto greased baking sheets.
- Bake for 9 minutes.
- Cool on baking sheets for a couple of minutes before removing to a wire rack to cool completely.
help.... I made this recipe and it smelled great and tasted great, but the cookies broke apart in a million pieces when I tried to remove them from the pan, and pick them up to eat them... What could I have done wrong?
