Gingerbread Man

Note: parchment paper on the cookie sheet before baking is extremely helpful for making gluten free cookies not stick.

Ingredients
- 3 1/4 cups (plus a little more) Bobs Red Mill GF flour mix
- 1/2 tsp. Baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
- 2 tsp ginger
- 1/4 tsp cloves
- 1 cup margarine (milk free works best)
- 3/4 cup dark brown sugar
- 1 large egg
- 1/2 cup molasses
Directions
Preheat oven 325 F
- Whisk GF flour, baking powder, salt, cinnamon, ginger, cloves in a bowl.
- Cream margarine and sugar. Add molasses and beat until smooth.
- Add the dry ingredients, mix until just combined...it will be very runny. slowly add extra GF flour one scoop at a time until the dough becomes thick. Separate into two balls, flatten and refrigerate for 1 hr or until firm
- On a GF floured surface roll dough out to 1/4 inch thick. Use cookie cutters to make men.
- Bake 9-11 mins.
Hello- I try to avoid margerine, would another fat work in this recipe?
is it just me or am i missing where to add the egg? with the molasses?
also, do you add the dry ingredients all at once or scoop by scoop?

you can use butter, my son is allergic to dairy to margerine makes these GF and dairy free, but butter will work

Replace1 cup margerine with one of the following:
1 stick of butter
1 stick Earth Balance (Non-Dairy) Buttery Stick
8 tablespoons Spectrum Organic Shortening
8 tablespoons vegetable or olive oil
For reduced fat:
6 tablespoons unsweetened applesauce + 2 tablespoons fat of choice
These cookies tasted great although a bit gritty. Not sure what happened but they really fell apart. Could barely place them on a plate without them falling apart. Kids ate them anyway :)
