GF Peanut Butter Cookies- 3 ingredients -- EASY

3 ingredients, that's it. This recipe is used by many of my non celiac friends love this recipe. I take these cookies with me to family events so there is a GF treat that everyone will enjoy. ~So easy my celiac son started making these when he was 8.

Here is your first easy recipe.....
GF PEANUT BUTTER COOKIES- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
Directions
- It works best if you soften the peanut butter in the microwave first.
- Mix it all together.
- Place on a cookie sheet just like regular peanut butter cookies, use a fork to push them down a bit and sprinkle a small amount of sugar on top.
- Bake at 375 for 12 min. Remove from the oven and let them sit on the pan for 5 min before you remove them.
I have been using a recipe like this for years, but I add 1 teaspoon vanilla and don't put sugar on top. I often add chocolate chips and/or 1/4 cup cocoa or carob powder. This makes a fudgey yummy cookie. Also, you can use crunchy peanut butter.
I made these with splenda instead of sugar and added a 1/2 c of splenda. I also used natural p.b instead of regular just b/c thats all I had. They turned out wonderfulyl and were so easy. It took maybe 5 mins to throw together!
I have made these twice and have found they taste even better with using part brown sugar and part white sugar, also put semi sweet chocolate chips in them and one or two on top of the cookie. I found the best peanut butter for the best price at targets do far. No corn syrup just peanuts and salt

Hi! I got this recipe when my son brought it home from grade school in Albuquerque over 20 years ago. My kids always loved them. we never sprinkled sugar on them tho, and I do remember they weren't as good if you over cooked them (they are pretty soft when they come out,so its easy to want to leave them in longer). I think they called them unbelievables, since they are such a surprising ingredient combo to make a good cookie.
