Peanut Butter Balls (gluten free, egg free)

I'm including the brands of ingredients I used, but feel free to substitute any brand you use.

Servings: 36 pieces
Ingredients
  • 1 jar Smart Balance Peanut Butter
  • 2 sticks Smart Balance Butter Blend
  • 1 1/2 lb. bags Wal-Mart Great Value Powdered Sugar
  • 1 bag of Nestle Chocolate Chips (white, milk or semi-sweet)
  • A few Chips of parafin wax (optional)
Directions
  1. Melt butter in a medium-size microwave-safe bowl. Add the peanut butter. Blend well. Add powdered sugar. Blend until smooth and creamy.
  2. Form into small balls between 1/2 and 3/4 inch round. Melt chocolate chips in a small microwave-safe bowl. Heat in 30 second increments so the chocolate doesn't scorch. When chocolate is smooth, you can add a few chips of parafin wax. If you store the balls in the fridge, you don't need to add the wax.
  3. Dip the balls in the chocolate. For better handling, you may want to chill the balls in the fridge for 10 to 15 minutes before dipping. Enjoy!

    Oh my gosh my Mom would make these and so very yummy especially at Christmas time thank you for the recipe.
